Before Fame
He first began working with food at his parents restaurant in Vitry. He then worked at the Michelin-starred restaurant du Parc in Villemomble. He earned his CAP in pastry and dessert making, and in 1983 he began his professional career as a pastry assistant at Jacques Chibois' multiple Michelin-starred restaurant Gray d'Albion.
Trivia
He has won several awards for his cooking including Pastry Chef of the Year by Gault Millau in 1991, 1 Michelin star for his restaurant La Table d'Anvers restaurant, and was awarded an Honorary Member of the French National Cooking academy in May of 2003.
