Before Fame

He studied under the mentorship of Michelin-starred, internationally famed chef Joel Robuchon in his home country of France before relocating to Australia in the 1990s. One of his earliest and greatest achievements in the culinary field came after he was asked to manage a restaurant named Bilson's (later named Quay) in Sydney.
